French Carrot Salad
Ingredients
0.5 kg carrots
2 teaspoons Dijon mustard
1 tablespoon lemon juice
1.5 tablespoons vegetable oil
1.5 tablespoons extra virgin olive oil
1 teaspoons honey, to taste
0.25 teaspoon salt
0.25 teaspoon freshly ground black pepper, to taste
2 tablespoons chopped parsley
1 tablespoon finely chopped shallots
Instructions
- Grate the carrots.
- In a salad bowl, mix the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper.
- Add the carrots, parsley and shallots and mix. Taste and adjust seasoning if necessary. Cover and chill until ready to serve.
Usually, I make the dressing ahead and then grate and add the carrots before the meal to keep them fresh.
