French Carrot Salad

Ingredients 

0.5 kg carrots
2 teaspoons Dijon mustard
1 tablespoon lemon juice
1.5 tablespoons vegetable oil
1.5 tablespoons extra virgin olive oil
1 teaspoons honey, to taste
0.25 teaspoon salt
0.25 teaspoon freshly ground black pepper, to taste
2 tablespoons chopped parsley
1 tablespoon finely chopped shallots


Instructions

  1. Grate the carrots.
  2. In a salad bowl, mix the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper.
  3. Add the carrots, parsley and shallots and mix. Taste and adjust seasoning if necessary. Cover and chill until ready to serve.

Usually, I make the dressing ahead and then grate and add the carrots before the meal to keep them fresh.
